Life’s Short. Eat Cookies.

I am a firm believer in the saying “Life’s Short. Eat Cookies.” My favorite (and always will be my favorite) are the classic chocolate chip cookies! I love trying recipes to find the absolute best one out there. Recently I came across one on pinterest (sadly I do not have the original source- but this was not my recipe, just sharing!)

Here it is:

1 cup butter (two sticks)

1 cup sugar

1/2 cup brown sugar (I used light brown)

2 eggs

2 teaspoons vanilla

2 1/4 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1 12 oz. bag of semi-sweet chocolate chips

Cream together the butter and sugar. Then add in the eggs and vanilla. Slowly add flour, salt and baking soda. Add chocolate chips. Take a spoonful for yourself!

I cooked mine in a 375 degree oven for 10 minutes. The first batch (without refrigerator time) came out yummy but a little flat. I took the dough out the next day and baked again, this time 350 degrees for 10 minutes, and they came out thick and fluffy!

Warning: leaving dough unattended can, and will, result in missing pieces- at least in my home it does!

This was the first batch- flat but really yummy!

The second batch (after being refrigerated for 24 hrs.) came out 3x as thick!
